These muffins are an absolute hit in our house, especially with my 3 year old daughter who loves to help with the pouring and the mixing.
Not only do they taste amazing, but they are a healthier option to your traditional banana muffins, using wholegrain spelt flour, natural sweetener, and packed with amazing nutrients: oats (fibre, protein, magnesium), chia seeds (Omega 3, calcium, iron), bananas (potassium, B6, Vitamin C), pumpkin seeds (protein, zinc, magnesium), and nuts (fats, protein, b vitamins).

INGREDIENTS
1 ¾ cups spelt flour ⅓ cup oats
1 teaspoon baking soda ½ teaspoon salt
1 tablespoon chia seeds
⅓ cup melted coconut oil ½ cup organic maple syrup or honey 2 eggs (or flax eggs for a vegan option) 3 over ripe bananas ¼ cup oat milk or non-dairy milk
1 teaspoon vanilla extract
1-3 drops On Guard essential oil blend
1 handful of pumpkin seeds
1 handful chopped nuts (walnuts or cashews are my choice)
METHOD
Preheat over to 180C. Mix the flour, oats, baking soda, salt and chia seeds together in a large mixing bowl. Add the coconut oil, maple syrup, eggs, bananas, milk and vanilla into your Vitamix or blender and blend on medium until combined. Pour the mixture into the dry ingredients, add the remaining ingredients and stir together. Pour into muffin tin and bake until the tops spring back when lightly pressed.
