Blueberry, Lemon + Lavender Muffins

INGREDIENTS:

  • 2 cups wholemeal flour

  • 1/4 teaspoon baking soda

  • pinch of salt

  • 4 tbsp raw honey

  • 1 cup coconut milk

  • Juice + rind from 1 lemon

  • 4 tbsp coconut oil (melted)

  • 1 tsp vanilla extract

  • 2 eggs (room temperature)

  • 2 drops doTERRA lavender essential oil

  • 1 cup fresh blueberries

     

     

     

     

     

     

     

     

     

 

METHOD:

  1. Preheat the oven to 180C 

  2. Mix together the flour, baking soda and salt.

  3. In a separate bowl, whisk together the honey, coconut milk, lemon, coconut oil, and eggs.

  4. Gently mix the wet and dry ingredients together. Do not over mix.

  5. Add the lavender and then gently fold in the blueberries into the batter.

  6. Spoon batter into a lightly greased muffin tin

  7. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean

  8. Cool on a wire rack before eating. Enjoy!
