Hemp Seed Falafels

INGREDIENTS:

  • 2 cans chickpeas (drained and rinsed)

  • 1/4 cup fresh parsley 

  • 1/4 cup fresh coriander

  • 2 spring onions (sliced)

  • 1 carrot (grated)

  • 2 garlic cloves 

  • 2 tsp baking powder

  • 3 tbsp olive oil

  • 2 tbsp lemon juice (or a few drops of lemon essential oil)

  • 1/4 cup hemp seeds

  • 1/4 cup oats 

  • 2 tbs chia seeds

  • 1 tsp ground flaxseed

  • salt + pepper to taste

METHOD:

  • Preheat the oven to 180C 

  • Add all ingredients to food processor and pulse until mixture forms a coarse sand-like consitency (add more oil if mixture is too dry)

  • Line a baking tray with baking paper and make golf ball shaped balls with the mixture, then press down into patties using a fork.

  • Bake in oven for approximately 30 minutes
