
Ingredients:
3 cups of chopped nuts (I used almonds, pecans & walnuts)
1 1/2 cups mixed seeds (I used pepitas & sunflower seeds)
1 cup shredded coconut
2 tbsp hemp seeds
1 tbs chia seeds
1/2 tsp sea salt
2/3 cups honey
3 tbsp coconut oil
OPTIONAL: 2 drops doTERRA Cinnamon Essential Oil
Method:
Preheat oven to 170C
Roughly chop the nuts and add to a mixing bowl
Stir through the mixed seeds, coconut, hemp seeds, chia seeds and salt
Heat the honey and coconut on the stove until just melted then pour into nut mixture
Add essential oil (if using)
Stir through until combined then press mixture into a lined baking tray
Bake for about 20 minutes or until golden brown
Once completely cooled, use a sharp knife to cut into bar-sized pieces
Store in an airtight container. Store in the fridge for a more crunchy bar
