I have a beautiful lime tree in my backyard, and after a painful year of no fruit we are finally back in limey abundance. We picked a handful the other day and I wanted to create something really delicious with them. I asked for some suggestions on Instagram and the resounding answer was KEY LIME PIE! So here is my plantbased version. It is easy, no bake, and absolutely delicious. If you give it a go make sure you let me know!
1 cup raw cashews (soaked for at least 1 hour)
3/4 cup pitted dates
3/4 cup coconut oil
1/4 cup coconut cream
5 drops doTERRA Lime Essential Oil
Zest of 3 limes (+ extra to garnish!)
1 tsp vanilla extract
To make the base, blend ingredients in a high powered food processor until it forms a ball. Then press into your cake/tart tin and set aside.
Mix all filling ingredients in a high powered food processor until completely smooth, then pour on top of base.
Sprinkle with extra zest.
Place in freezer for at least an hour to set.
